Deliciously fresh Aligoté from Burgundy. For a long time a bit of the neglected child of Burgundy Chardonnay, Pascal proves the opposite. Don't you dare dilute a crème de cassis with it, this Aligoté is full of tension, purity, precision and an elegant roundness. Slightly spicy with aromas of lemon and green apple and a delicious creamy finish. Beautiful thirst-quenching acids, certainly as a counterpart to the hearty Burgundian cuisine based on cream and butter.
Pascal Marchand is a small producer with a big name. The Canadian poet moved to Burgundy at the age of 21, where he was winemaker at Domaine du Comte Armand, Clos des Epeneaux in 1985. Here he became convinced of a purely organic method, fair for the land and the grapes. In 1999 he became responsible for the new Domaine de la Vougeraie in Burgundy. Here too he introduced the organic method. After some wanderings and consulting jobs, the first step towards his own company was taken in 2006. A few years later (2010) he found financial support from the Canadian banker Moray Tawse, who also bought some vineyards and the Maume (Gevrey) estate. In addition to the 8 ha of own vineyards that are cultivated biodynamically, organic grapes are also bought from third parties.
In 2018 the documentary 'Grand Cru' was made about him, definitely recommended.

In the cellar: Alcoholic and malolactic fermentation sur-lie on barrique. Grapes with whole bunches and all through the press. 12 months maturation on old French oak barrels. Soutirage before bottling.
