Marc Soyard himself is the owner of Domaine de la Cras, after a question was put out by the city of Dijon: Who will take over the only wine company in the AOC Coteaux de Dijon? A relatively unknown area of origin to the general public and in fact cultural heritage of the city. Marc meets the conditions: He does not come from the region and also not from an (established) family of winemakers. Marc does have experience in viticulture, he worked 7 harvests in a row with none other than Jean-Yves Bizot, a cult figure and a perfect training ground in making sulfite-free wine.
Marc now farms 8 hectares in Coteaux de Dijon, making him the only winegrower in this OAC for the time being; you could call it a monopole of origin.
The agriculture is organic with biodynamic influences, on marl soils typical of Dijon (not the usual Burgundy clay-lime combination), which is beautifully reflected in the wines. In the cellar the wines are produced by minimal intervention, also the use of sulphites is minuscule.
The "L'Equilibriste" wines (once only made for a local circus festival) are completely without added sulphites. Outside Dijon, Marc also grows a small plot in Ladoix, the wine "Hermaïon" is made from there.
Despite the unknown origin, the wine scene knows how to find Domaine de la Cras. The wines excel in originality, energy and precision. In short, flawless, naturally made wines. We offer the wines of Marc Soyard on allocation.
