- In the cellar: The base of this drink is a kombucha of Oolong tea from the Fujian province in China. The tea itself has a floral and citrus-like character. During the 2nd fermentation, quince, melon, lemon thyme and marigold are added as an infusion. Before bottling, the drink is aged in wood, which creates a tannin experience and further enhances the structure. It also gives a pleasant little hint of vanilla.
