Description
Spicy, soft fruity natural wine. Floral, with citrus tones and a light bitterness. Straw yellow, slightly plump mouthfeel and yet with a mineral, salty aftertaste. Sicilian wine par excellence.
Valdibella is a cooperative in Sicily where the winegrowers have a say in the management and style of the wines. There are 6 winegrowers responsible for the 38 hectares of vineyards. They work as naturally as possible.
The vineyards are located between 300-500 m altitude in a hilly area between Camporeale and Monreale. 'Regosuoli' (brown) topsoil with a lot of clay (rich in calcium, lime). Yield 50hl/ha, manual harvest in small containers.
Only wild yeasts and natural malolactic fermentation are used. No filtering, no sulphites added.

- In the wine cellar: Grapes are completely destemmed after harvest and then soaked in cold water overnight. The next day the grapes are pressed and a spontaneous (cold) fermentation takes place for about 20 days. 6 months maturation in stainless steel. Unfiltered.
