Val Pares! A much-used expression from the time when the snobbish wine elite in Paris looked down on the small winegrowers in the south. Lazy, they were, with their small plots of land and low yields and, moreover, wines with very low levels of intervention. Cédric Saur shows here that these 'lazy' wines are incredibly tasty. A combination of the well-known southern trio, Grenache, Syrah and Mouverde, together form a delicious blend of candied dark fruit with power and character and at the same time a soft iron-containing base and very finesse. Very nice Faugères rouge, whatever the snobs say.

Cédric Saur is the founder and winegrower of Domaine la Grange d'Aïn. In addition to his own domaine, he is also a winemaker at his father's château, Château Haut-Fabrèques in the Languedoc. Cédric receives a small gift of vineyards from his father Jean-Luc every year. Inheritance tax in France is very high. This has allowed Cédric to make organic wines from 50-year-old vines for years.
