Orange Aligoté full of life and full of fruit. 10 days skin contact and a very slow pressing. Burgundy wines like this are not often seen. Candied fruit, soft creaminess, a bit salty, fine bitters and all tension.

In the vineyard: Grapes from different plots between 10 and 90 years old. Harvested by hand. Rows and vines are planted well apart. No ploughing for a lively topsoil.
In the wine cellar: 10 days Maceration on the whole bunches. Slow pressing of 22 to 48 hours which gives the wine extra maceration time. The must is then vinified in the cellar of Arnaud's house in Détain. Unfiltered, without addition of So2.
