Viré Clessé - Emilian Gillet 2021 - Thevenet et Fils (BD & vin nature)

Very special Bourgogne Chardonnay. Instead of a classic Bourgogne Chardonnay with wood maturation, this Chardonnay is matured on epoxy tank. This gives the wine a very fresh, mineral character with beautiful acids. Yet the wine has sufficient thickness because 10% of the wine has botrytis had. This is also called noble rot or Noble rot. A wine with 100% botrytis grapes gives a sweet golden yellow white syrupy dessert wine. Since the chardonnay is quite light and fresh, the grapes with 10% noble rot give sufficient roundness and support to still a 'thick' white burgundy. Instead of a buttery touch the wine has more finesse and in the background a hint of honey (not sweet!). Very special powerful chardonnay with much finesse.

Father Jean and son Gautier Thevenet each make wine under their own name but share the wine cellar.
Jean Thévenet, a vigneron in the French “Mâconnais”, is considered by many to be the best producer in his region. This idiosyncratic winemaker swears by the traditional winemaking of his ancestors. Just like his grandfather, he picks the Chardonnay late and partially overripe. In combination with low yields, thorough selection of the grapes, maturation on the yeast (“sur lie”) and limited temperature control (the natural insulation of his winery is sufficient), this produces white wines with a complexity and body that you rarely find in the Mâconnais.
