Description
Bâton, very elegant terroir wine consisting of 80% Carignan Noir and 20% field blend of white grapes (Grenache Gris, Macabeu, Carignan Gris and Tourbat). And all that from one vineyard. Is it red? White? Orange? Rosé? We conveniently choose red. Juicy wine with fruit as leading characters. Plum, cherry and currant pull the cart, followed by a pleasant ripe tannin and a particularly salty aftertaste. Mouth full of goodies!

In the vineyard: Vines averaging 70 years old. Orchards at 320m-420m altitude. Grapes from different terroirs, consisting of granite and calcareous black slate. Harvested entirely by hand on September 1st.
In the cellar: Whole -cluster fermentation for 10 days using only indigenous yeasts. The grapes were then pressed and the juice was transferred to neutral barrels to complete fermentation. Alcoholic and malolactic fermentation ended on September 23. 5 months of maturation. Only at bottling a very low dosage of SO2 was added. Unfiltered.
