Scherer & Zimmer – 2020 WEISS

Ten years ago, the young Micha Zimmer and Felix Scherer started a small estate on the slopes of the Rhine plain, less than ten kilometres from the French border.

With Felix as head of the vineyard and Micha as head of the cellar, the then boys, after their training in Freiburg, returned to the family roots in the southern part of Baden. They exchanged city life in Berlin for a small pigsty with about two and a half hectares of vines where the two grow Gutedel, Spätburgunder, Graubugunder, Weissburgunder, Müller-Thurgau and Sauvignon Blanc, among other things. In addition, they also cultivate a small piece of land Elbling on the volcanic Kaiserstuhl where they grow white and green asparagus.

Certainly not an excessive choice for the use of only capital letters. This WEISS wine from Scherer&Zimmer therefore deserves a large font. A blend of Pinot Blanc and Müller-Thurgau with a little bit of skin contact, for the extra punch. Unfiltered, almost lemon yellow in color and fine with hints of tropical fruit, lime and a slightly salty undertone. Almost makes you forget that you are in Bad Krozingen and not on a Mexican beach with a well-known glass with a salted rim.

• Grape variety: 50% Müller-Thurgau, 50% Pinot Blanc
• In the vineyard: Scherer&Zimmer work biodynamically and all grapes are picked by hand.
• In the cellar: The two different types of grapes first matured separately. Of the Müller-Thurgau, 1/3 of the grape skins fermented for a while, after which the juice fermented further on its own yeasts, in old wooden barrels, after pressing. The Pinot Blanc was pressed directly, after which it also matured further on its own yeasts, in old wooden barrels. After ten months, the two were combined in stainless steel tanks. The wine was not filtered. Malolactic fermentation and without the addition of sulphites.
