Vin Jaune. 'Yellow wine'. A very special wine, that's for sure! Vin Jaune producers have patience, a lot of patience. It is legally determined that Vin Jaune matures for no less than 6 years and 3 months in wooden barrels. During that period the level in the barrels slowly drops, evaporation takes place, la part des anges. This gives space for the formation of 'voile' (just like in Jerez, southern Spain), a yeast that feeds on the wine, provides protection against oxygen and at the same time gives the wine an unmistakable, unique taste.
After all those years of maturation, you are left with only 0.62 liters of the equivalent of 1 liter of wine. In Jura, they have come up with an adapted bottle size for this, the Clavelin.

The result is stunning. The Petit family makes Vin Jaune that smells of walnut, almond, chestnut honey and dried fruit. And then those acids... Endless. Wine for the enthusiast, the connoisseur, the curious.. You want to taste this! And will last -if stored well- for decades..
