Description

Slightly bitter, unroasted almonds, a light butter and yet so beautifully earthy. Aromas of white flowers and a tropical touch of mango with a fatty edge for the right balance. Soif blanc, of both fresh tones and a sultry southern richness.

In the vineyard: Manual harvest and biodynamic. Clay and limestone soil.
In the wine cellar: 10 months maturation, half in wooden barrels and half in stainless steel.

Domaine du Loup Blanc is the life's work of Alain Rochard, Nicolas Gaignon, Carine and Laurent Farre. The 18 hectares of vineyards are located on the border of Aude and Herault, in the AOC Val de Cesse, a wild nature reserve surrounded by garrigue, pine forests and ravines.

The four winemakers strive every year, every day, for the highest possible harmony and expression of land and grape in their wines. Each harvest is done manually and respects all stages of artisanal production. The grapes are brought to the cellar in boxes and are completely destemmed. Fermentation takes place in small concrete vats with the aim of leaving the tannins as thin as possible.
The youngest vines were planted in 1990 and the oldest in the 1960s, with the exception of Carignan whose plantings date back to 1897.
