In the vineyard: Very steep terraced vineyards in Torgiano at 200-300 meters above sea level with a subsoil of sandy loam. Poor soil with a high percentage of limestone. 10-year old vines. Manual harvest at the end of October.
- In the cellar: Manually destemmed. Spontaneous fermentation in concrete tanks. Matured for twelve months in used tonneaux & barriques, on the fine 'lie'. Regular stirring of the 'lie'. Then matured for twelve months in concrete tanks. Bottled without to clarify, without filtration and with minimal use of sulfite.
