Ten years ago, the young Micha Zimmer and Felix Scherer started a small estate on the slopes of the Rhine plain, less than ten kilometres from the French border.
With Felix as head of the vineyard and Micha as head of the cellar, the then boys, after their training in Freiburg, returned to the family roots in the southern part of Baden. They exchanged city life in Berlin for a small pigsty with about two and a half hectares of vines where the two grow Gutedel, Spätburgunder, Graubugunder, Weissburgunder, Müller-Thurgau and Sauvignon Blanc, among other things. In addition, they also cultivate a small piece of land Elbling on the volcanic Kaiserstuhl where they grow white and green asparagus.
Here they produce a Sauvignon Blanc with substance. “KB” stands for Kirchberg, By doing a short moment of skin contact and a soft pressing, a powerful, nevertheless elegant white wine is created here. Still somewhat young, it carries the aromas of ripe yellow fruits such as papaya, persimmon and a dominant passion fruit. Absolutely juicy, somewhat smoky and a round and buttery mouthfeel which makes the wine very tasty with, asparagus. A Sauvignon Blanc like you certainly don't drink it much more often.

- In the cellar: After a few hours of skin contact, the grapes go through a soft pressing, which makes for a more elegant wine. Only the finest juice of the grapes is used. Spontaneous fermentation in old wooden barrels sealed from oxygen.
