Description
Sicilian vino Rosato, from young vines just planted in the Calderara Sottana district. Made according to the traditional "Pista & Mutta" fermentation. It was the wine that farmers made for themselves to drink after just a few months. And as we more often than not, especially in Italy, the products born from simplicity are often the tastiest. Fruity, flowery, full of flavour.

In the vineyard: Young vines (partly piedefranco) newly planted in the Calderara Sottana district, consisting of a terroir of sand and stone. Harvest entirely by hand, organic farming.
In the cellar: Vinified according to the traditional "Pista & Mutta" fermentation, i.e. the must is pressed (pista) and immediately decanted (mutta), which, thanks to the absence of grape pomace, produces less tannins and a less dark red colour. Maturation in stainless steel and barriques. Only a little sulphite added at bottling.
Quality mark: low intervention
Straight from Etna, Calabretta. The winery goes back four generations and managed to expand the vineyards through various marriages. Today, Massimo & Massimiliano are at the helm. Since 1997, they have breathed a new breath of fresh air into the family business. Not striving for quantity but quality by working as traditionally and naturally as possible.
They produce mineral and highly digestible wines, a mix of the winery's own character mixed with the unique characteristics of the grapes and their terroir. Fermentation takes place in stainless steel and maturation in Slovenian oak barrels. The vineyards are located at an altitude of 300 to 900 meters and the soil consists of a diverse terroir of black volcanic ash and fine, salty sand and a lot of lava rock with very good drainage. Thanks to the large differences in altitude, the influence of the wind and various micro-climatic properties, it is possible here to grow grapes completely organically with as little intervention as possible. The harvest usually takes place between October 5 and 20. During this period, the ripening of the grapes slows down considerably and the pressure behind the right harvest moment is a lot lower than, for example, in the vast majority of Europe.
Very stable wines from the highest altitude with an enormous thirst-quenching quality. Both in white, rosé and red.
