Description

Kerasos means cherry in Greek. And so, a very logical name for this cuvée. The strong cherry aromas cannot be escaped. Characteristic of Nero d'Avola from Camporeale, Sicily, ruby ​​red, spicy and fruity, forest fruits and violets with soft tannins. The area is subject to considerable temperature fluctuations and so a mouthful and yet a very fresh aftertaste develops here.

Valdibella is a cooperative where the winegrowers still have a say in the management and style of the wines. There are 6 winegrowers responsible for the 38 hectares of vineyards. They work as naturally as possible.

The vineyards are situated between 300-500 m altitude in a hilly area between Camporeale and Monreale. 'Regosuoli' (brown) topsoil with lots of clay (rich in calcium, lime). Yield 50hl/ha, manual harvest in small bins.

Only wild yeasts and natural malolactic fermentation are used. No filtering, no sulphites added.

  • In the vineyard: Fields located at 250-350 meters above sea level, on steep slopes. Harvested entirely by hand. Calcareous clay soil and exposed to considerable temperature fluctuations.
  • In the wine cellar: Grapes completely destemmed. A little grape must is added for fermentation. Fermentation for 10 days at a temperature of 24 degrees. Then the pulp is separated from the juice and the grapes go through the press. After malolactic fermentation the wine matures for 6 months in stainless steel. Unfiltered, without the addition of So2.
