The Amarone della Valpolicella is obtained by a unique technique, used since Roman times, of "appassimento". The grapes are dried naturally for three to four months in the "fruttaio". During this process the grapes lose 40-50% of their original weight, resulting in an intense concentration of flavours. In January the grapes are slowly pressed and after fermentation the wine matures for 42-50 months in French oak barriques and tonneaux. Before the Amarone is marketed, the wine matures for another year in the bottle. It should therefore come as no surprise that this wine has a lot of weight and concentration. Very complex and powerful, with warm notes of ripe red plum, herbs and dried fruit.

The winery where Wild Nature's red wines are made is located in the hilly eastern part of Valpolicella, near Verona. The area around the estate is an oasis of wilderness, full of original vegetation and animals. Wild Nature is a pioneer in organic grape growing, having been working this way since 1974. The winery emphasises the care and respect they feel for the soil through their labels, which show all sorts of wild animals that inhabit their estates.

Preserving biodiversity is an important part of the winery's philosophy. They have worked to create a biotope around the farm (by planting hedges, ponds, copses and tree-lined banks) that encourages the natural presence of all kinds of animals. There are many hares, foxes, pheasants, ducks and other migratory birds around the farm.
