Description
Summery sparkling rosé from Piemonte from young Pinot Noir vines planted on clay, limestone and marl soils. Made using the méthode ancestral , the oldest method of making sparkling wine. The wine is bottled during the "half moon" with the addition of a little dried grape juice or natural residual sugar from the first fermentation. This causes a second fermentation in the bottle, creating carbon dioxide.
Fausto and Cinza Cellario are 3rd generation winegrower and the 1st generation within the family that makes strictly natural wine. They make trendy biodynamic natural wines from local grape varieties such as Favorita, Nascetta, Dolcetto, Barbera, Nebbiolo and Grignolino. Fausto and Cinza close the bottles with a crown cork because it can happen that a bottle starts to ferment again in the bottle.
Over 13 hectares of vineyards (and some hazelnut trees) cultivated biodynamically on three different plots within the western Langhe.
