In the vineyard: Grapes from different plots between 10 and 90 years old. Harvest by hand. Rows and vines are planted well apart. No ploughing for a lively topsoil.
In the wine cellar: 4 weeks skin maceration and spontaneous fermentation with whole bunches, then soft pressing. Unfiltered, without addition of So2.
