Description
Consonance or consonance in Dutch, is a term from the music world and means something like 'sounding the same' or 'sounding together'. A completely understandable title for this wine made from Cabernet Franc and Pineau d'Aunis. A match made in heaven! Structurally underestimated and underexposed grape Pineau d'Aunis gives hearty pepper, forest fruit and fine tannin in the blend. A wine to enjoy slowly, or to enjoy together with your table companion(s). It will certainly consonate!

- Grape variety(ies): 70% Cabernet Franc and 30% Pineau d'Aunis, planted in 1997 and 2009. 50 cm deep clay-limestone soil on a tuff rock. Plot on a slope of 63 meters to 70 meters altitude. Manual harvest.

In the cellar: Spontaneous fermentation with whole bunches, maceration of 9 days in stainless steel and fiberglass. Maturation for 7 months in barrels. Then bottled without clarification and filtering and without sulphites.
