Irresistible, this subtly powerful red from d'Aupilhac. Aromas of red forest fruits and a fine ripe spicy garrigue punch. And those silky tannins.. Yum! It makes this wine a terribly fine example of what Sylvain can conjure up. We are fans!
Domaine d'Aupilhac is located in Montpeyroux, approximately 36 km northwest of Montpellier. Sylvain is the fifth generation winegrower in his family. When he founded Domaine d'Aupilhac as an independent wine estate in 1989, he also grew melons, asparagus, tomatoes and peaches, but since 1992 he has focused solely on his wines. Since then, he has gradually expanded his wine cellar and estate. The estate started with 5 hectares from the town of 'Aupilhac' (name explanation, ed.), mainly planted with Carignan. In the meantime, a considerable number of plots have been added, many at higher altitudes and planted with a range of various typical southern French grape varieties. Domaine d'Aupilhac operates entirely organically and biodynamically.

In the vineyard : Terraces of the vineyards are located on a slope of limestone from the Jurassic period, alternating with blue marl from the Miocene.
In the cellar : All grapes are fermented separately by spontaneous fermentation. 15 to 20 days skin maceration by pigeage. 30 months maturation in small wooden vats.
