Description
A wine that only really shows itself after about 4 years, but can then still last for a very long time. Beautifully round, full and refined. In the nose a subtle aroma of just-lit-match, which quickly disappears into the background for more savoury, ripe black tea and pepper aromas, with cherry and raspberry fruit. The laurel drop of Holland&Barrett(t). Full-mouthed, elegant, silky and an aftertaste that extends beyond the horizon.

In the vineyard: Terroir of granite and clay. Fruit from a selection of vines spread over the entire estate, aged between 7 and 30 years.

In the cellar: Spontaneous fermentation of about 4 weeks. No temperature control. 30% of the stems macerate along. Spontaneous malo. Maturation in egg-shaped concrete eggs. Unfiltered, only (minimal) sulphite at bottling.
