Description
Umami wine! The wine is aromatic, with pineapple, lychee, ripe pear and white blossom, and has a soft, creamy, almost ethereal mouthfeel. Gyotaku is an ancient art form from Japan, they make prints of fish on rice paper. Gyo means fish and Taku impression.
Christophe Mittnacht is married to Yuka, a Japanese star chef/sushi chef from Tokyo. Now in Alsace she runs a gîte where she also gives sushi workshops. Together they blended and tested until they had created the perfect wine for Yuka's kitchen.

In the wine cellar: The ripe grapes are destemmed and pressed, spontaneous fermentation and maturation in large old Alsatian oak barrels.
