Description

Jonathan doesn't make a lot of white wine. And when he does, it's from dark grapes. Like this wine, made from Cabernet Franc among other things. By pressing the grapes, the skins have little chance to give color to the juice. Mixed with Chardonnay a fine, soft white wine, that still blushes a little. Rinse apple, white almond, after an hour open -or a quick carafe- even a little fuller attack and more open.

  • Grape variety(ies): 60% Cabernet Franc, 40% Chardonnay
  • In the vineyard: Fields right on the Puy Notre Dame hill, clay-limestone soil and clayey sand on tuff. Cabernet Franc plants of 20 and 40 years old, Chardonnay of 39 years.
  • In the cellar: After manual harvesting, pressing takes place (not destemmed), for Cabernet Franc only the first part of the press is used to make Blanc de Noir (no use of bleach), spontaneous fermentation, maturation on lees for 10 months, of which 15% in used wooden barrels of 400 litres. Then bottled without clarification and filtration and with a little sulphite.
