Description
Eric Thill originally comes from Alsace, where his family makes wine on the Schlossberg. In 2007, Eric and his wife moved to the Haut-Rhin (Jura) and bought 2.76 hectares of The winery and cellar they built themselves. Organically certified since 2015 and biodynamically working on the now 5.8 hectares. Since the 2019 vintage, the wines have been Demeter (biodynamic) certified.
Average age of 50 years old vines, facing South. Clay, grey and brown slate subsoil. Only 25 hl/ha. Grey, brown and red marl subsoil.
Fermentation is stopped early to preserve residual sugars.
