Description
Fresh, tight crémant from Château de Passavant from the Loire. Elegant style with light fruit, lots of citrus and a delicate mousse. Certified organic since 2001 but already switched to organic methods in 1998.
Blend of Chenin Blanc (60%), Chardonnay (20%), Cabernet Franc (20%). Traditional method . The second fermentation comes from natural residual sugars. No extra sugars, yeast or shipping liquor are added. At least 24 months of maturation 'sur lattes'. Brut Nature (0-3gr/l residual sweetness). Slate soil with sand and gravel. Vineyards are located 60m above sea level, good natural drainage. Manual harvest.
