100% Carricante, from, unlike the other wines of Pietrodolce, the eastern side of Etna and therefore a lot more sun-drenched. The grapes come from pre-phylloxera forests, between 100 and 120 years old, at 850 meters above sea level. Grapes are hand-picked and then go through a soft pressing. Maturation in stainless steel tanks and then further in the bottle. 

Delicate and floral with notes of lilies and jasmine, combined with pineapple and Sicilian lemon and a pinch of iodine. Lightly creamy and high minerality.

Near Solicchiata, in the Sicilian municipality of Castiglione di Sicilia, located on the northern side of Etna, are the vineyards of Pietradolce. The vineyards are located between 600 and 900 meters above sea level and are spread over approximately 11 hectares. Two parts of the estate are located in the region of Rampante and one part in Zottorinoto. Winemaker Giuseppe Parlecchio likes to stick to local traditions and therefore only works with indigenous grape varieties, of which Nerello Mascalese, Nerello Capuccio and Carricante play the leading role. Grapes are grown using the Alberello method, the traditional way of doing things and the most suitable method for the local conditions. 

The active volcanic soil, full of mineral components, clearly leaves its mark on the unique wines of Pietradolce. Extra unique, is the wine thanks to the pre-phylloxera vineyards. The phylloxera epidemic of the second half of the 19th century century could be more difficult to grasp around Etna because of the high sulphur content of the active volcano. We are dealing here with original, indigenous vines of between 90 and 130 years old. No import from America but real, Sicilian vineyards. 

The wine cellar is also unique, a work of art in itself. Of high architectural class and a hypogene construction in which the building is subordinate to the landscape instead of dominating. Respectful towards the landscape, agriculture and as eco-friendly as possible because only energy-saving techniques are used inside. The cellar is therefore a mix of art and craftsmanship. Spread out are works of art by local artists who, like Pietradolce, only use materials from the area and also try to give back as much as possible to nature.
