Description
L'Equilibriste Blanc comes from a 1 ha parcel of Chardonnay in the commune of Talant, planted by Marc in 2018. Talant is just next to Plombières-les-Dijon, but the vineyard is on the opposite side of the valley. The city of Dijon preferred that Marc plant new vineyards next to the old ones, but Marc decided to plant the vineyard in Talant to hedge against local frost or hail, and also to explore a neighboring terroir that has been completely abandoned since the phylloxera. Clever and interesting! In 2021, Marc also planted Aligoté and Savagnin, with the aim of eventually creating a white field blend. Since those plants are still too young, this wine is (for now) 100% Chardonnay. The Equilibriste cuvées are bottled without sulfur.

In the wine cellar: Vinification in wooden barrel with natural yeasts, maturation for 6 months in used wooden barrels, not filtered and clarified, no added SO2 at bottling.
