Normally Jérémy makes one wine per plot, but from 'Les Veuillots' he makes 3 different wines, only the maturing process differs.
Les Veuillots is a family plot of 1.7 hectares and has an enormous plant density. With an exposure to the south and a marl-limestone soil it is a special vineyard. Jérémy decided to make 3 different wines from it, the difference is in the maturation: stainless steel, cement egg or a wooden barrel.
This is the 'Inox' version, matured on stainless steel. The wine is therefore somewhat primary, nicely fruit-driven and nicely balanced. juicy appley, clean, nice citrus bitter, enormous length.. Jérémy manages to let terroir speak.

In the vineyard: Organic farming. Marl and limestone soil.

In the wine cellar: After sorting the fruit, it is gently pressed and spontaneous fermentation starts. This 'INOX' version matures further on stainless steel. Bottling without filtering & mini pinch of sulphite.
