Beautiful full sweet fruity wine from Banyuls. Hints of cocoa, kirsch, mocha and fig. Finger licking good.
The wine habit of Banyuls: Fortifying wine with wine alcohol, which creates a full-sweet drink: Find doux naturels. Over time, different subcategories have emerged. This is a so-called 'Rimage' Banyuls, which means that it concerns a wine from a very good harvest year.

In the vineyard : The vineyards cover an area of 7.5 hectares and are located on the narrow, sun-drenched terraces of Banyuls-sur-Mer, overlooking the Mediterranean Sea. Slate soil. Average age of the vines is 30 to 40 years for Grenache Noir, 30 to 50 years for Carignan and Grenache Gris and 20 to 25 years for Muscat d'Alexandrie. Yield of around 20 hl per ha. Manual harvest of healthy, ripe grapes in 2 or 3 triages.
- In the cellar: All grapes are destemmed, after crushing spontaneous fermentation takes place. After the 'mutage' (stopping the fermentation by adding neutral wine alcohol) 1 month skin maceration in wooden barrels. Then maturation of 8 months in stainless steel barrels. The wines are not filtered and clarified. Only a little sulphite is used during bottling.
