Mineral dry Grauburgunder. Fresh, power and soft acids.
The plots of Katja and Jens Bäder are only 6 ha in size and are located around the small village of Wendelsheim in Rheinhessen. The soil consists of loess, sand and also volcanic stone "Porphyr".
Manual harvest and only natural yeast from the vineyards themselves is used. Katja and Jens use a modern style of winemaking and have gained experience all over the world.
The soil of their vineyards is called Rotliegender Rhyolite. This special soil is the basis for a characterful mineral Grauburgunder. The rocky surface forces the roots to grow deep into the earth, in search of the nutrients that make this wine so special. And that is precisely where the characteristic of this wine is derived from.
Slow natural fermentation without added yeasts, maturation in stainless steel tanks. The work in the vineyard and cellar is done according to the organic guidelines of the Bioland association.
