Delicious frizzante of 100% Aligoté from the Hautes Côtes de Beaune. Made with the ancestral method and a very tasty, soft mousse. Light notes of quince and flower honey. Crisp and fresh with a long finish.

In the vineyard: Grapes from different plots between 90 and 10 years old. Harvested by hand. Vines are relatively far apart and a dominant grassy landscape prevails.
In the wine cellar: Grapes pressed directly Slow pressing of 22 to 48 hours which gives the wine extra maceration time. Juice bottled with a small amount of residual sugar. Fermentation in the bottle. Unfiltered, without the addition of So2.
