A cannon. Spicy, fiery and rich in thick, dark red, juicy fruit with a bit of menthol for the fresh touch. Generous and yet perfectly balanced with a very nice length. Absolutely no fancy decanter needed. Open an hour in advance and then you are good. Nice for now or nice for later.
The organic winery Domaine Grand Guilhem is 12 hectares in size and is located just above Cascastel-des-Corbières. There in the Fitou area they make beautiful pure natural wines. 50 years ago the Cru Fitou, the first red wine from Languedoc-Roussillon, received an AOC status. If you are in the area, don't forget to book an overnight stay! Very pleasant and very picturesque.
